Some say they taste similar to Morel mushrooms and that they can develop a slight aroma of anise. Oyster mushrooms are popular in soups, stews, and sauces. They can help your body as well. There is more and more promise in studies that show its effect on cholesterol levels and cancer. According to scientists at Penn State University in Pennsylvania, oyster mushrooms naturally produce compounds called statins that lower bad cholesterol (LDL). As for cancer, a higher mushroom consumption is associated with a lower risk of cancer. And research shows a possible anti-tumor effect from polysaccharides in oysters. A polysaccharide is a complex carbohydrate made up of smaller sugar molecules. Specific polysaccharides, known as beta-D-glucans, are suspected to stimulate the immune system to fight cancer. The beta-D-glucan isolated from oyster mushrooms is called pleuran.
